Banana Bread

Nothing like homemade banana bread with a little maple sweetness


  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/4 cup milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 3/4 cup white flour
  • 1/2 cup walnuts
  • 1/2 cup of granola (for the topping)


Preheat oven to 350 degrees and grease a 9×5 loaf pan. In a large bowl mix coconut oil and maple syrup. Add eggs, mashed bananas, and milk. (If the coconut oil solidifies let it rest in a warm place for a bit or microwave it, 10 seconds at a time.) Stir in the baking soda, vanilla, salt, cinnamon. Add flour, but don’t over mix. Fold in the nuts. Pour batter into the loaf pan and top with the granola. Bake for 50 minutes or until a toothpick inserted in the middle comes out clean. Let cool and enjoy!
