Maple Blueberry Crisp

A dessert for anytime of the day! Loaded with juicy blueberries and sweetened with maple syrup.


  • 4 cups blueberries (fresh or frozen)
  • 1/2 cup maple syrup
  • 2 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 3/4 cup brown sugar
  • 3/4 cup oatmeal
  • 3/4 cup flour
  • 1/2 cup cold butter


Preheat oven to 375 degrees. In a medium bowl, combine blueberries, maple syrup, cornstarch, cinnamon, and vanilla. Pour into a greased 8 inch cast iron pan or baking dish. In a separate bowl, add brown sugar, oatmeal, flour. Cut butter in with a pastry cutter or fork, until mixture resembles coarse crumbs. Sprinkle over the top. Bake in preheated oven until filling is bubbly and the topping is golden brown, about 35-40 minutes. Serve with vanilla ice cream. Enjoy!
